For a few months, on Instagram, the cakes have been merge with floral compositions. In New York, the pieces mounted from worries, eyelets or tulips (stems included!) Of yip.studio and love France (@yungkombucha420) are all the rage, while the Californian pastry chef Sasha Piligian (@sashimi1 ) deposits various petals on its desserts. Wine, Jennifer Hart-Smith, French pastry chef and naturopath, embellishes her shortbread tookies with blueberries or Begonias. It’s naturally very pretty, but are all the flowers edible?
As for mushrooms, to avoid poisoning, it is better to consult a reference work, for example the plant treat. Recognize and cook edible plants, by François Couplan (Blood de la Terre, 2015). As a general rule, it is better not to ingest flowers bought from the florist, who tends to treat them with pesticides, but rather cultivate them at home or provide themselves in a safe place (large fees or on a specialized site, Maisauge. fr, for example).
All flowers do not have the same qualities: some are worth more by their aesthetics than by their flavor, like thoughts, whose cooks use and sometimes abuse, because their mauve and yellow colors are perfect for waking up too much dull. In terms of taste, we will have more fun with calendula flowers, peppery and spicy, or those of fennel, which recall the liquorice. Special mention to borage flowers, royal blue color, almost as iodized as oysters.
