In Russia, the production of bakery products in January-July 2021 decreased by 4 percent, as evidenced by Rosstat data. At the same time, according to the study of the “Analysis of the flour confectionery market in Russia”, prepared by BusinesStat in 2021, until 2020 in the bakery segment there was a stable sales growth – up to 1.91 million tons.
Retail trade remains the main channel of the sale of bakery products. However, the situation in the pandemic of 2020 in the field of catering, as well as crisis phenomena in the Russian economy significantly affected the work of the industry. Many major market players, like small regional and local bakeries, did not survive locked. This led to a decrease in the total volume of flour products by 1.1 percent – up to 1.89 million tons.
Changes in public catering lead to the fact that instead of the players who left the players appear new participants. So over the past year and a half, the Pyaterochka trading network (included in the X5 Group) has opened a network of more than 5,200 own bakeries in all 67 regions of presence. Every day, more than 200 tons of fresh bread are baked daily in network stores.

In the first half of 2021 in the Southern Federal District, one of the most popular types of baking presented in the bakeries of the network was Khachapuri – it was sold more than 130 thousand pieces. But the Volga guests “Pyaterochka” preferred to the national baking of Elesh (more than 100 thousand pieces), Cheburecam (more than 90 thousand pieces) and traditional puffs with Adygei cheese and greens (more than 35 thousand pieces).
Residents of the North-Western Federal District in Pyaterochka, more often preferred sweet baking. Her sales almost 30 percent exceeded the satisfying types of bakery products. In the Central Federal District, on the contrary: similar indicators for sweet bells and puffs by 20 percent are lagging behind the lack of baking.
The guests take care of an average of more than 12 million units of national baking, and in the first half of the year, guests of the network stores purchased more than 248 million freshly plated aromatic products.
